DOM PERIGNON ŒNOTHÈQUE
The “œnothèque” ( the name in French for a library of wines ) is the name given to the cellars near Epernay where older vintages of Dom Pérignon are stored. Ever since the 1950’s, Dom Pérignon have kept back a limited number of bottles from each declared vintage to monitor the progress of the wine matured in perfect conditions.
These bottles are kept with their original corks on the original yeast lees, which result from their second fermentation in bottle and which are essential to the character and ageing ability of the finest Champagnes. The wines are finally disgorged a few months prior to their eventual release.
