Rosé & Sweet Wine

Rosé wines are made from red grapes that have had a very short soak on the skins to add a touch of colour and a layer of red fruit whilst retaining their lighter body. They show different colours, such as delicate salmon and peach through to deep pink and light red. Colours usually have more body and a touch of structure; this is a result of a slightly longer maceration on the skin.

801 “Pure”, Côtes de Provence Rosé Mirabeau 2019 £48
804 “Rose et Or”, Côtes de Provence Rosé Château Minuty 2019 £75

805 “Calafuria”, Apulia Tormaresca 2019 £47
806 “Scalabrone”, Tuscany Guado al Tasso 2019 £52

808 “Gris de Gris”, Beqaa Valley Château Ksara 2019 £40

810 “Conde Valdemar Rosé”, Rioja Bodegas Valdemar 2019 £32

These are wines made from white grapes in the same manner as red wine. To produce a white wine, the skins are removed after the juice is pressed and they are discarded. However, in the case of Orange wine the skins are left with the juice to macerate during fermentation. This process adds a more unusual character to the wines and a tannic structure more akin to red wines.

Dessert wines produced from grapes that have been frozen while still on the vine. The sugars and other dissolved
solids do not freeze, but the water does, allowing for a more concentrated grape juice to develop. The frozen
grapes are brought into the winery where they are transferred into a grape crusher and then into a grape press.
Only about 10–20% of the liquid in these frozen grapes is used for ice wine and because the juice is so sweet it can
take anywhere from 3 to 6 months to fermented. When it’s all done, wines have around 10% ABV and a range of
sweetness from around 160–220 g/L of residual sugar.
