Former River Cottage Chef and author Tim Maddams to bring his expertise and passion for sustainability to Simpsons

In March 2018, Simpsons Restaurant in Edgbaston will be welcoming a familiar face to its cookery school. Tim Maddams, the former head chef of River Cottage and one of the authors of River Cottage A-Z, will bring his unique seasonal and sustainable approach to food to Simpsons on Thursday 22 March and Friday 23 March.

Food fans will recognise Tim from the River Cottage series, where he regularly appeared alongside Huge Fearnley-Whittenstall. Since then, he’s become a private chef, author, cookery school teacher and presenter.

Tim spent much of his childhood on the family farm in Wiltshire, gleaning a close
understanding of farming and fostering a love of the great British countryside, wild food and quality produce which forms the cornerstone of how he thinks about food today.

Over the course of his career, he has worked with culinary luminaries such as
Fergus Henderson, Alistair Little, Marco Pierre White and Mark Hix. These days, Tim combines his passion for good husbandry and sustainable eating with his
incredible skills in the kitchen. He was one of the authors of River Cottage A-Z and wrote Game: River Cottage Handbook No.15.

Simpsons Restaurant will be celebrating 25 years in business in 2018 and Tim will be the first guest chef of the year. On teaming up with Simpsons Tim says, “I’m delighted to have this opportunity to share some of my seasonal culinary know-how in such a symbiotic environment.”

The enthusiastic and engaging chef will be presenting a seasonal masterclass, hosting a chefs’ table and cooking up a lunch inspired by his time at River

Tim Maddams Seasonal Masterclass – Thursday 22 March

Learn how to eat more sustainably and make the most of every ingredient with this hands-on masterclass which will take place in Eureka Kitchen on Thursday 22 March. Tim will enlighten you with his impressive knowledge and commitment to sustainable and ethical sourcing. He will also give ideas for using more unusual ingredients and plenty of advice for combining and bringing out amazing flavours.

Those taking part in the class will prepare their own lunch, with instruction and guidance from Tim. There will be plenty of opportunity to ask him about his
experience working in professional kitchens alongside lots of great chefs and his extensive knowledge of food and provenance.

Chef’s Table dinner with Tim Maddams – Thursday 22 March

Tim will prepare a six course tasting menu for up to ten guests at 7pm on
Thursday 22 March. This interactive dining experience is available for a group booking for ten people or as a supper club with up to ten diners. The dinner is priced at £80 per person and includes pairings from Purity Brewing Co.

Guest chef lunch with Tim Maddams – Friday 23 March

On Friday 23 March, Tim will be serving up some delicious, seasonal dishes from his cookbooks supported by the Simpsons team. Each delicious course will be presented by Tim, who will share his inspiration and tips for putting together each dish.
