We are very excited to have Tim Maddams sharing his wealth of knowledge about sustainable sourcing and his passion for creating delicious food this month.
We still have a few places at his Masterclass on Thursday 22 March and a couple of places at his Chef’s Table that evening. Tim’s masterclass is priced at £75 per person and includes a three course lunch and beer tasting with Purity Brewing Co. The Chef’s Table dinner is priced at £80 per head and will include the following:

Sourdough, wild garlic butter
Cockles, crab, wild leeks, cider
Seared bass, Jerusalem artichokes
Early asparagus, hens egg, herby crumbs
Cured beef fat, pigeon, mushrooms
Westcoombe ricotta, fermented beetroot, honey
Rhubarb, rawbarb, brown sugar ice cream

Canapé : Seared cured beef fat on toast, caper and parsley
starter : Wild garlic soup, soft boiled hens egg, celeriac salt
Main : Slow roast mutton shoulder, cockles, wild leeks, Jerusalem artichokes, roasting juices
Dessert : Slow cooked rhubarb, brown sugar ice cream, almond and oat crumble
